Today was one of those rare Sundays where neither Stevie nor I had to rush off to work. We got to sleep in, sit around in pj’s and really enjoy the morning. Having the morning off of course also meant that I had time to make breakfast! Typically on a Sunday like this we’d go out for breakfast, usually to one of our favorite breakfast spots in Atlanta which is West Egg Cafe, but we went out for dinner last night and wanted to save a little money.
One of the reasons Stevie loves West Egg so much is that for weekend brunch they have a special plate (The Peachtree Plate) that comes with brown sugar bacon. So I decided to attempt to recreate it at home. I found quite a few recipes and I eventually settled on trying this one. I used Publix Thick Slice Bacon (my personal favorite) and I was all set. The bacon smelled simply delicious while cooking, until towards the very end when a distinct burning smell wafted from the oven. Apparently my finicky oven had decided to burn the ends of some of the strips, while leaving the ends of others rather undercooked. The few strips that survived were actually fairly decent, although they did not compare to the bacon I find at West Egg and I think in the future I’ll leave it up to them!
To go along with the bacon and scrambled eggs I found a delicious frozen biscuit made by White Lily. I decided to try to emulate West Egg one more time and try to recreate the spiced honey butter they serve for their biscuits. I found a couple of different recipes on the internet, yet none of them seemed to be a perfect fit. I ended up mixing and matching a few different ones to come up with this simple recipe:
6 TBS Butter
2 TBS Honey
1 tsp CinnamonWhip all ingredients together until suitably blended. Scrape into a rammekin or other small dish and refrigerate until needed.
The butter came out quite yummy even if it wasn’t exactly how I expected it to taste. Stevie loved it so I expect I’ll be making it again in the near future, although I may substitute allspice for cinnamon in the next go round to give it a more subtle taste. I’ll be sure to report on how that turns out as well!

Everybody keeps talking to me about West Egg, and I’m really eager to check it out sometime soon. I used to be a big fan of Flying Biscuit but, as to be expected once they franchise out it goes downhill. If you are ever in Asheville though, there is an awesome spot in West Asheville that the people who opened Flying Biscuit run called Sunny Point. If you guys ever take a trip up that way I’d highly recommend checking it out!
